The adventure begins with a pickup at your Casablanca hotel. The tour comes with the option to first go to the market with your host to select the fresh ingredients needed for the meal, or to go straight to the host’s home. If the market option is chosen this is where you go first and your host will show you how to navigate a Moroccan market, which can be an overwhelming task on your own, while selecting the fresh produce before heading to the meat market. The meat market offers a true, local experience, but it is not for the faint hearted. You will also get to see the many spices that are on offer and the host can even help you do a bit of shopping for yourself if you are searching for something specific.
After you have completed the market experience it’s time to head to the host’s home, by car, to start preparing the meal. A welcome drink consisting of Moroccan mint tea will be served upon arrival, and while you sip the tea you will hear about the country’s history, culture and cuisine, and about life in Morocco.
Next, get ready to roll up your sleeves and help the host prepare the authentic Moroccan meal that is on the menu in the beautiful open-space kitchen. Some of the preparation for the meal might have been done in advance as it might take longer than the one hour you will be cooking together. The dishes to be served are typical home-style dishes that often feature Casablanca’s local seafood, and dishes that are seasonal as fresh produce and ingredients are used.
While the dishes will vary you might get to try lamb tagine with seasonal vegetables, Moroccan lemon chicken with olives, marinated and grilled seafood, couscous, chakchouka (roasted bell pepper salad), zaalouk (eggplant salad) with homemade bread, or a camel burger.
The meal will be topped off with a dessert that might be oranges with cinnamon, Moroccan cakes, or milk pastille, before it’s time to be dropped off at your hotel.
